Before I updated my Performance Monitor it says my CPU was around 83-92 F

Now that its updated it says 122-145 F and its very random. One second it'll be 122 then next it'll be 145

My GPU is Just 89 which is about usual I think I never really checked.

Maybe the not updated version was Wrong.

But my CPU Should not be 145 F It just Fluctuates When I'm doing nothing

You can only update your Performance Monitor by updating the full ASC program.

Have you tried running other Temperature monitoring programs to compare readings, as at the moment

you are only guessing as to which one is correct.

140f is about 60c so the temperature for the CPU (most cpus have a tj of 105c) is fine. to change between Fahrenheit and Celsius put the mouse on the F and click to see the temp in C
